This quick and healthy dish is packed with flavor, perfect for a weeknight dinner. The combination of juicy turkey and sweet bell peppers makes it both light and satisfying.

Ingredients:

  • 300g (10 oz) turkey breast, cut into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp cumin (optional, for extra depth)
  • ½ tsp black pepper
  • Salt to taste
  • ½ tsp red pepper flakes (optional, for spice)
  • 1 tbsp soy sauce or lemon juice (for a hint of acidity)
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Prepare the ingredients: Slice the turkey into strips and chop the vegetables.
  2. Heat the pan: In a large skillet, heat olive oil over medium-high heat.
  3. Cook the turkey: Add the turkey strips and sauté for about 5 minutes until golden brown. Remove from the pan and set aside.
  4. Sauté the veggies: In the same pan, add onions and garlic. Cook for 2 minutes until fragrant. Then, add the bell peppers and stir-fry for 5 minutes until slightly softened but still crisp.
  5. Combine everything: Return the turkey to the pan, season with paprika, cumin, black pepper, salt, and red pepper flakes. Add soy sauce or lemon juice and stir well. Cook for another 3 minutes.
  6. Serve: Garnish with fresh parsley or cilantro and serve hot with rice, quinoa, or crusty bread.
